I break for pineapple brownies

Literally!! I had to take a break from all the craziness to bake one of my favorite sweets!! These pineapple brownies are delicious and sooooooo easy to make. They have saved me many times when I needed to bake something in less than a half hour. They never last more than 24 hours around here!!!


Pineapple brownies

1 3/4 cups flour
1 3/4 cups brown sugar
2 eggs
1 teaspoon baking soda
1 (20 oz) can crushed pineapple (with juice)

Combine all ingredients and mix well. Pour onto greased brownie pan. Bake at 350 F for about 25 minutes. When cool, frost with powdered sugar or cream cheese icing. For extra flavor, add a small amount of pineapple juice to icing.

That's how easy it is!!!

On a final (and wonderful) note, I was thrilled to find out that a bone marrow donor was found for Marta!! As you may recall, I posted about Marta, a 4 year old portuguese girl battling leukemia who was in desperate need of a bone marrow transplant. A compatible donor was found in Spain. Great news for Marta, but there are still many other people needing suitable donors, so please consider joining the donor bank. All it takes is a blood sample!!


Tomorrow I will post sneak peeks from some of the things I have been working hard on... I'm excited about what I have made and hope others will like it too!!
